TOMMY & COURTNEY DURRANT
Thomas “Tommy” Durrant is a lifelong Cohoes resident and is a proud member of the firefighter family here in the city. Like many who spend their days in a firehouse, he developed a love of cooking and takes pleasure in preparing food for his colleagues, friends and family. He took the opportunity to share this passion with the city of Cohoes. What began as a successful limited engagement during Cohoes’ Rock the Block summer music series, as well as event catering, Tommy decided it was the right time to offer this dining experience to the people of the Capital District on a permanent basis at Signal 30 Barbecue. In 2019, Tommy Durrant opened Signal 30 BBQ in Cohoes, NY with the help of his wife Courtney. Since 2019, Signal 30 BBQ has continued to grow and in 2023 they are excited to launch Durrant's at Van Schaick.
EXECUTIVE CHEF -
Donald Rogers is a native and current resident of Cohoes. Donald began his culinary career at Cohoes High School, attending Culinary school at the Capital Region Career & Technical Institute. He continued his Culinary education at Schenectady County Community College. Donald has over 20 years of experience in the culinary field, working in many different cuisines and restaurants. Donald has refined the menu and recipes at Signal 30 BBQ since joining the team in December of 2020.
pitmaster - chanc rustin
Christoper "Chanc" Rustin is also a lifelong Cohoes resident. Chanc began his culinary career at Cohoes High School. Chanc is "employee zero" joining Signal 30 BBQ for it's launch in September 2019. Chanc always comes to work with a smile on his face and a positive attitude.
pitmaster - bret mollnow
Bret Mollnow is another lifelong Cohoes resident who joined the team in October 2019. No task is too big or too small for Bret. Bret enjoys tending to the fire and smoking meats, as well as many other kitchen duties.

Ryan "RyMac" MacPherson is also a lifelong Cohoes resident and fellow firefighter in Cohoes. RyMac prides himself in knowing what the people want.
